It is pretty simple – you like Margherita Pizza or you just not! Personally, I am more fan of some meaty versions. But when I have tried this recipe, I totally changed my mind. Now, my family has this kind of pizza on a weekly menu. We have it for dinner and the good thing is that it is low in carbs.
The crust is nice and crispy and with the topping, it is the real deal. Preparation takes just about 20 minutes, so shortly you’ll have a great dinner.
LOW-CARB MARGHERITA PIZZA
Ingredients that you need:
For the crust:
- 5 oz. (150 g) Mozzarella cheese, grated
- 2 oz. (60 g) of full-fat soft cheese
- 1 egg
- 3 1/3 oz. (100 g) ground almonds (also you can combine with ground sunflower seeds and sesame)
- 2 tablespoons of olive oil
For the topping:
- 1 lb. (500 g) of fresh tomatoes or reduced sugar Tomato Ketchup
- 3 garlic cloves
- 2 balls of Mozzarella
- 2 tablespoons of olive oil
- spices according to your wishes
- basil leaves
Preparation:
The crust: Mix grated Mozzarella cheese, cream cheese, ground almonds, olive oil, and egg. Then shape the pizza crust of this mixture on a baking tray covered with baking paper. Place in preheated oven and bake for about 15 minutes at 180 degrees C (350 degrees F), or until it gets a golden color.
Topping: Boil tomatoes, peel them, mix in a blender and slip through the strainer. In the tomato sauce, add three chopped cloves of garlic and mix olive oil. Spread the tomato on the crust, and add over the mozzarella and sprinkle with spices as desired. Place in the oven for another 5 minutes or until the cheese melts, and before it gets the golden color.
Before serving, sprinkle with fresh basil leaves. Enjoy!
